Hawaiian Salad (It's really simple, Andrea!)

Have on hand the following ingredients:

1 small pkg of shredded coconut
1 small container of sour cream (Light sour cream OK too)
1-2 cans of Mandarin oranges
1 small can of crushed pineapple

Drain oranges and pineapple* in a sieve. FIRST, mix sour cream and about a cup of coconut together. Next add lightly drained pineapple and mix well. LAST add the oranges and fold in to above mixture GENTLY to keep them from breaking.

Sometimes I add green grapes to this recipe. I don't know the exact measurements for anything but I've made it so many times and I think those are the ingredients I buy when I get hungry for it. You will have lots of coconut left over unless you can find the little cans of it.

*If your pineapple is in real juice you drink what you drain off or add it to your orange juice - yum. This recipe would taste good with fresh orange sections cut up!

  1. Didn't Mom put in 1 or 2 cups of rinsed and drained mini marshmallows too! I remember her saying it was too sweet if you didn't rinse the sugar off of the marshmallows?

  2. I made this for Easter and checked the amounts:
    1 cup shredded coconut
    16 oz. sour cream (light)
    2 x 15oz. cans of Mandarin oranges, drained
    1 20oz. can of crushed pineapple, drained
    1/2 bag of mini marshmallows
    (I also added 2 c. sliced green grapes and 1 sliced banana.)
