These are more or less a 'wing it' recipes. I don't think they were written down.
Potato Salad
Boiled or microwaved potatos (Skin-on works as do redskins)
Diced onion and celery to taste - start w/ 1/3 to 1/2 cup
Miracle Whip (Mother used a lot; I like less)
Hard boiled egg slices optional.
Mix together thoroughly and gently as ingredients are combined. Add eggs last.
Top with paprika.
Macaroni Salad
As above substituting macaroni for potatos.
Diced green olives to taste. Start with 6 - 10 depending on size.
Depending on taste, salt can be omitted and added at the table.
