Breakfast Skillet
Dice two well scrubbed potatoes, leaving skin on. (Idaho potatoes)
Dice 1/4 large sweet onion.
Toast 4 slices of white bread, butter each piece then cut into small squares
Use 6 eggs, mix with a bit of milk and blend together for scrambled eggs.
In an Iron Skillet, melt 1/4 stick of butter.
On low heat, fry the diced potatoes until soft. Add diced onions and cook until they are no longer crunchy. Add eggs and bread and scramble until eggs are cooked. You can also add cooked bacon or just have bacon on the side.
OOPS! Add salt and pepper to taste while cooking!
ReplyDeleteA little history note on this recipe.......Mom taught me how to make this recipe. She said, sometimes when Grandma wasn't home to fix dinner, for whatever reason, Pap would make this for them for dinner, even though he called it his Breakfast Skillet.
