This one is for you Andrea! I know it is not a family recipe, but I remember eating oxtail as a child, don't have Mom's recipe for this one. Andrea had it on the Island and loved it. This recipe is from a friend of mine who lived in Grand Cayman and was from Jamaica.
Brown 2 lbs of oxtail in 3 ounces of oil.
Add 3 sliced onions, 2 chopped tomatoes, 2 crushed cloves of garlic, 3 tablespoons of curry powder. Salt and Pepper to taste. Stir for a few minutes and add enough water to just cover oxtail. Bring to a boil, then lower heat and simmer 2 to 2 & 1/2 hours, or until tender. Ten minutes before serving add 2 cups cooked broad beans, simmer and add salt and pepper to taste. Serve with cooked rice and plantains.
this is a bonus, I got oxtails from the last cow we got, no one else wanted them in the co-op. But I hadn't found a receipe yet. Thanks!
