Grandma Kuhn's Cole Slaw (w / Pam's additions)
2-3 T., finely chopped green pepper
1 T., finely chopped white onion (or scallions)
1 carrot shredded
1 T., finely chopped parsley
1/2 c. white sugar
1/2 c. cider vinegar
1/4-1/2 c. Miracle Whip
Paprika
Remove outer leaves of cabbage, quarter the head into four even sections and cut out the inner white core. Place each quarter head flat on a large cutting board and slice as thinly as possible with a SHARP butcher knife from top end to core end of each quarter. Place cabbage in bowl. Chop remaining vegetables and mix in with cabbage. In a 2 cup measuring cup, pour the vinegar and stir in the sugar. Allow sugar to dissolve a bit. Then whisk in the Miracle Whip until smooth. Pour this over the veggies in the bowl and mix well. Chill until ready to serve at least an hour.
NOTE: Grandma Kuhn's version is much simpler using only cabbage, Miracle Whip and a small amount of sugar (carrots optional). If the cabbage is fresh and sweet enough, no sugar is needed. Grandma sprinkled Paprika on top of each individual serving. Since cole slaw is one of my favorite veggies, I expanded the recipe to include more veggies for added flavors and antioxidants and to cut down on the Miracle Whip.
I also have substituted Kraft Mayo and Hellman's instead of Miracle Whip. You can vary the sugar and vinegar to your taste for more sweet or sour. The mayo can be varied to make it either creamier or juicer. More sugar and vinegar for juicier. Once I even added balsamic vinegar (1 T.), and chopped the cabbage and veggies coarser for deli style.

Dot's Creamed Cucumbers
1/4 cup Cider Vinegar
1/2 cup Sugar
1/2 cup Water
Miracle Whip (2 T.)
A few sliced Raw onion rings (optional)
Salt to taste.
Whisk together vinegar, sugar, and Miracle Whip first before adding water. Pour over cucumber and onion slices. Pour in coverd glass dish. Allow to chill in refrigerator several hours before serving. Serve in individual dishes since the juice will run. You may need to make more liquid depending on the amount of cucumbers you use. You can stir them to get them down in the juice too while they are chillin' :-)

Aunt Jeanne's German Potato Salad (Jim Westwood's sister)
2 lb. bacon - fatty - browned.
Put bacon onto potatoes, include grease.
1 - 2 cups sugar depending on your taste
1/4 cup white vinegar
1 cup water
2 T. flour to thicken (I assume you add this to the water and stir well.)
Salt & Pepper
3 bunches of green onions
Jeanne made this for a big family party at Patsy's house so that's why the recipe is so big. Maybe cut in half? Delicious potato salad!
I don't know if any further cooking is done after the liquid sauce is combined and the other ingredients are poured over it. Maybe check an internet recipe for that detail. I remember it served warm though.
Dottie's Rum Ball Cookies
1 cup Pecans, finely chopped
1 cup Powdered Sugar
2 T. Cocoa
1/4 cup Rum (I'm may try Rum Extract but use less?)
1 and 1/2 T. Light Corn Syrup
Mix crumbs with sugar, pecans and cocoa. Stir in rum and corn syrup. Shape into 1-inch balls. Roll in powdered sugar, regular sugar, nuts or coconut. Store in tightly covered container. Allow to ripen a few days for flavors to mix. Makes about 2 dozen.
Jane: I haven't made these for years. I have a couple other Rum Ball recipes that use more crumbs so if this one is too sticky to roll, add more crumbs. I may try rum extract bc I use it in "Rum and Coke" drinks and it tastes almost the same as the real thing.
Indian Pudding
4 1/2 cups Milk
1/4 cup Butter
1/2 cup Molasses
1 tsp Salt
1/4 cup Sugar
1 tsp. Cinnamon
Preheat oven to 325 degrees.
Scald 3 1/2 cups of the milk in top part of double boiler over direct heat.
Mix cornmeal with remaining 1 cup of cold milk. Add to scalding milk, stirring constantly. Place over boiling water and cook for 20 minutes, stirring frequently. Add butter, molasses, salt, sugar and cinnamon. Pour into greased baking dish (1 and a 1/2 quart). Bake for at least 1 and 1/2 hours. Serve warm with cream or vanilla ice cream.
Jane: I took this off an IndianHead cornmeal bag. Haven't tried it yet. Sounds like Mom's, only hers used a few more spices, like mace and cloves, I think. I seem to remember that was the first time she bought mace. I would use whole or 2 percent milk since whole was probably what was available back then when Mom made it. I don't have a double boiler so I'm just going to set a small pan in a bigger one with water in it.

Sweet Potato Casserole (Jim Kasun's sec'y, Judy)
1/2 c. sugar
1/2 c. butter
1 tsp. vanilla
2 eggs, beaten
1/3 c. milk
TOPPING:
1/3 c. butter
1 c. light brown sugar
1/2 c. flour or corn starch
1 c. chopped pecans
Mix together and put in 9x13 pan or baking dish. Mix topping and place on top of sweet potatoes. Bake 25 mins. at 350 degrees.
Mom noted: "Can put together the night before."

Stuffed Pepper Soup
1 can (28 oz) tomato sauce
1 can (29 oz) diced tomatoes (undrained)
2 cups cooked converted or long grain rice
2 cups chopped green peppers
2 beef bouillon cubes
1/4 cup packed brown sugar
2 tsp. salt
1 tsp. pepper
Brown beef & drain. Add remaining ingredients and bring to a boil. Reduce heat. Cover and simmer for 30-40 minutes or until peppers are tender.
(I like it with tomato juice added. It's a little dryer than I like so I add the tomato juice.)
Origin of recipe: I remember Mom & Dad liked getting this soup as a carry-out from Kings Restaurant. However, I think this recipe may be from Phyllis Swires, their neighbor. Not sure. Maybe Steve's recipe?
Potpie (York Daily Record, Oct. 2009)
Salt & pepper to taste
3 large potatoes, peeled & cubed
Parsley & saffron (optional)
2 sm. onions, chopped
Potpie dough
Wash the chicken and remove excess fat. Place in a large pot, cover with water, add salt and saffron and bring to a boil. Simmer for 1-2 hours until chicken is soft. Remove the chicken from the broth and allow it to cool. Remove the meat from the bones, cut into bite-sized pieces and set aside. Add onions and pepper to the broth and bring to a boil for about 15 mins. Add the potatoes and boil another 10 minutes. Roll out potpie dough and cut into pieces, about 2 in. square. Be sure the broth is boiling well and add the dough squares. If there is not enough broth, be sure to add water before boiling the potpie. Cover and boil about 20 mins. Add parsley and chicken and serve.
Potpie dough:
1 & 1/4 cup flour, 1 eggshell of water, 1 tsp. baking powder, 1 egg, 1 tsp. salt.
Mix all dry ingredients together. Add egg and water and mix. Roll out the dough and cut into squares. (on floured tea towels or waxpaper?)
I think you could substitute a meaty hambone for the chicken to make Grandma Kuhn's. This sounds a lot like how she used to make it but I know she did not use saffron and she probably didn't use baking powder. I have not tried this recipe but I clipped it from my newspaper along with a recipe for rivels, hogmaw and several pie recipes from York/Lancaster area.
Hawaiian Salad (It's really simple, Andrea!)
1 small pkg of shredded coconut
1 small container of sour cream (Light sour cream OK too)
1-2 cans of Mandarin oranges
1 small can of crushed pineapple
Drain oranges and pineapple* in a sieve. FIRST, mix sour cream and about a cup of coconut together. Next add lightly drained pineapple and mix well. LAST add the oranges and fold in to above mixture GENTLY to keep them from breaking.
Sometimes I add green grapes to this recipe. I don't know the exact measurements for anything but I've made it so many times and I think those are the ingredients I buy when I get hungry for it. You will have lots of coconut left over unless you can find the little cans of it.

Virgie Purcell's Broccoli Dish
Heat oven to 350 degrees
You will need........
2 pkg. of frozen broccoli , you can used shredded or whole broccoli spears, your preference(cooked 5 minutes)
2 chicken breasts (or more, already cooked) and cut into chunks
1 can Cream of Chicken Soup
1 can Cream of Celery Soup
1 cup of water to mix with soup prior to adding to recipe
1/2 to 3/4 cup Miracle Whip, depending on how much chicken you use
1 teaspoon curry powder, I use Alot more, depends on your liking for curry....
1 teaspoon lemon juice
1/2 to 1 cup shredded cheddar cheese or longhorn cheese
1/2 cup buttered bread crumbs
Place broccoli, chicken, soups, Miracle Whip, curry powder , half of the cheese and lemon juice in a casserole dish. Mix ingredients together.
This cassarole will take about 30 to 45 minutes to cook, depending on how much chicken is used.
Ten minutes, before done cooking, sprinkle the top with butter bread crumbs and the remainder of the cheese. It should be done and ready to eat when the cheese has melted over the top.
Scalloped Potatoes and Ham
You will need the following:
3-4 cups sliced potatoes
1/2 to 3/4 lbs of ham diced or sliced small
1 onion sliced
Layer potatoes, ham and onion in casserole dish.
Sprinkle potatoes, ham and onion with 2 Tablespoons
of flour then dot with about 3 to 6 Tablespoons of butter.
Heat, don't boil 1 and 1/4 cups of milk, add pepper, dash of salt,
1/4 Teaspoon paprika, add little dry mustard. Stir well while heating.
Bake with cover on casserole dish for the first 1/2 hour. Remove cover and continue to cook for another hour. The casserole will be done when slightly browned on top and potatoes are soft.

Dottie's Spicey Sloppy Joes
If not using pot roast then brown 1 lb. ground beef
1 c. onion or 1 medium onion
1 green pepper
saute and simmer 30 minutes, then drain
Put these ingredients in a crock pot.
Then add :
1 cup ketchup
1 tablespoon sugar
1 tablespoon apple cider vinegar
2 teaspoons mustard
1 teaspoon salt
1 teaspoon ground cloves
Stir all ingredients together well.
Let simmer in crock pot throughout the day.
Serve on your favorite type of hamburger buns.

Soup Stock/Broth from Meat
- Chicken, ham, beef, Oxtail, pork, etc.
- Water to cover plus a bit more (considerably more if you're adding dough like noodles)
- 1 - 2 medium onions. (whole for pot pie; diced for soups) More/less to taste.
- 2 - 4 stalks celery (whole or diced as above) More/less to taste. Celery seed can be used but add sparingly and cook it long because it's strong.
- Carrot coins (chicken rice soup; hash)
- Flour thickening if you're making stew (what we called 'Roast Beef Hash.') The thickness varies with taste, and you get some thickening anyway if you're using noodles or pot pie.
- Salt/Pepper to taste.
- Dash or 2 of liquid smoke if the ham is a bit weak.
If there's considerable fat, skim or chill and scrape then reheat and move forward.
Whole onions and celery can be taken out when they're very limp. They have no more to give. If diced, they become part of the dish.
Dottie's Lemon Pie
Lemon Pie
1 small can frozen lemonade
1 large cool whip
1 Eagle Brand Milk
Whip together and place in a graham cracker crust
Next........
1 Large Pudding (vanilla or lemon) prepared per directions
1 cup cool whip
1 can cherry pie filling
Blend gently together and pour over bottom layer.
Garnish with crushed Graham Crackers.
Refrigerate, then serve.
Oxtail & Beans for Andrea, Carrie and Michelle.
Brown 2 lbs of oxtail in 3 ounces of oil.
Add 3 sliced onions, 2 chopped tomatoes, 2 crushed cloves of garlic, 3 tablespoons of curry powder. Salt and Pepper to taste. Stir for a few minutes and add enough water to just cover oxtail. Bring to a boil, then lower heat and simmer 2 to 2 & 1/2 hours, or until tender. Ten minutes before serving add 2 cups cooked broad beans, simmer and add salt and pepper to taste. Serve with cooked rice and plantains.
Mom's and Jane's Shoofly Pie
You can use Grandma Kuhn's pie crust recipe or just buy two frozen pie crusts.
Mom and I perfected this recipe over time. I used to make it alot when the girls were young.
Mix together in a bowl
2 c. flour
1 cup brown sugar
1/4 tsp. salt
1 tsp. cinnamon, nutmeg, ginger and cloves
Combine dry ingredients then work in 1/2 c. shortening or butter to make it into a crumbly mixture. We decided we preferred the butter.
In another small container mix
1/2 c. molasses (baking)
1/2 c. hot water
1/2 teas. baking soda (rounded)
Pour last mixture in pie crust first, making sure if frozen pie crust, they are thawed. Then sprinkle the dry ingredients over top.
Bake at 400 degrees for 10 minutes, and then 350 degrees for 30 minutes. Depending on your oven, check it towards the end to make sure it isn't getting too overcooked. Love this recipe!
Eloise Magnuson's Appetizer
You will need the following:
Champagne Glasses for as many people as you are going to serve;
Large Container of Lime Sherbert;
1 liter bottle of 7-UP.
Place a generous scoup of lime sherbert in each champagne glass;
Gently pour 7-UP over the top of the sherbert, being careful it doesn't fizz up to quickly;
Serve Immediately.
Grandma Kuhn's Millionaire Fudge
Pap Kuhn's Breakfast Skillet
Dice two well scrubbed potatoes, leaving skin on. (Idaho potatoes)
Dice 1/4 large sweet onion.
Toast 4 slices of white bread, butter each piece then cut into small squares
Use 6 eggs, mix with a bit of milk and blend together for scrambled eggs.
In an Iron Skillet, melt 1/4 stick of butter.
On low heat, fry the diced potatoes until soft. Add diced onions and cook until they are no longer crunchy. Add eggs and bread and scramble until eggs are cooked. You can also add cooked bacon or just have bacon on the side.
Peanut Butter Ice Cream Topping
4 Tablespoons of Jiff non crunchy peanut butter
4 Tablespoons of Marshmallow Fluff
White Karo Syrup
Note: You may want to adjust the amounts of peanut butter and marshmallow fluff, depending on how you want it to taste or how much you want to make.
In a double boiler melt the peanut butter and marshmallow fluff together. Add enough white karo syrup to end up with a thick yet pourable mixture. Serve over vanilla ice cream. Or just eat the peanut butter sauce all by itself, it is sooo good! Ha! Ha!
Potato Salad or Macaroni Salad
Potato Salad
Boiled or microwaved potatos (Skin-on works as do redskins)
Diced onion and celery to taste - start w/ 1/3 to 1/2 cup
Miracle Whip (Mother used a lot; I like less)
Hard boiled egg slices optional.
Mix together thoroughly and gently as ingredients are combined. Add eggs last.
Top with paprika.
Macaroni Salad
As above substituting macaroni for potatos.
Diced green olives to taste. Start with 6 - 10 depending on size.
Depending on taste, salt can be omitted and added at the table.

Mayonnaise Devil's Food Cake aka "Mayonnaise Cake"
1 1/2 cups sugar
1 1/2 cups cold water
6 tablespoons cocoa (which was always Hershey's)
3 teaspoons baking soda
1 teaspoon vanilla
1 cup Miracle Whip (Mother never used mayonaisse in anything. Always Miracle Whip. See comment on amount.)
Mix all sugar and mayonnaise. Add cocoa, soda, and vanilla. Then add flour and water until all is added.
Bake at 350 degrees for 55 to 60 minutes.
Dottie's Southern Burgers (Sloppy Joes)
1 medium onion (diced)
3 tablespoons ketchup
3 tablespoons prepared mustard
10 1/2 oz can Campbell's Chicken Gumbo Soup
(Mother says: "Dottie adds chili sauce and horseradish to taste.")
Brown beef and onion in a little hot fat. Stir in ketchup mustard and soup.
Simmer until mixture has thickened a little (about 15 mins) Spoon over toasted split buns. May be made early, refrigerated and reheated.
Makes 6 servings.
Pine Cone (Porcupine) Balls
1/3 cup dry (uncooked) rice
1/3 cup minced onion
1/3 cup chopped/minced green pepper
Season to taste with salt & pepper. Mold into balls, place in roaster & cover w/ 1 can of Campbell's Tomato Soup. Adding bay leaf is optional (but not if you're making it for Steve). Mother never used it.
Cook slowly about 3 hours at 350 degrees.
Peanut Butter Cookies
1 cup Crisco
1 cup peanut butter (always Skippy)
2 teaspoons soda
1 cup brown sugar
2 eggs
3 cups flour
1 teaspoon vanilla
1/4 teaspoon salt
Cream shortening, add sugar, eggs, peanut butter.
Add flour and soda mixed together.
Shape into small balls. Press flat with fork.
Bake 10 min. in 350 degree oven.

I made this and it was exactly the same. We did a taste test. It was the same.
Noodle Kugel
8 ounce egg noodles medium width cooked and drained
1 large cream cheese
stick butter
4 eggs

1/2 cup raisins, also cinnamon
Crush corn flakes on top and dot with butter
Bake 350 degrees 1 1/2 hours
1000 Island Dressing
2 cups Miracle Whip
1/2 cup Heinz Chili Sauce
4 hard cooked eggs (chopped)
1 1/2 dill pickles or sweet pickles (chopped)
1/3 cup celery (chopped)
1 green pepper (minced)
1 small onion

Reception Salad
1 tablespoon Knox gelatin
Juice from 1 large can of crushed pineapple
crushed pineapple from can
2 packages cream cheese mashed with small can of pimentos
1/2 cupful celery -- cut fine
2/3 cupful walnut meats -- cut fine
1/2 pint whipping cream
1/8 teaspoon salt
Serves 12
Sea Foam Frosting
1 1/2 cup brown sugar (packed) dash salt
1/3 cup water
Beat over boiling water high speed electric beater
7 (looks like a 7 but I am not completely sure)
minutes or till holds stiff peaks. Remove from water, add
1 teaspoon vanilla, heat 1 minute.
Grace's Wedding Cake Frosting
1 cup water
2 teaspoons vinegar
boil to soft ball
2 egg whites (stiff, not dry) warm. When hold a peak cool a little.
1/2 cup powdered sugar a tablespoon at a time.
Uncle Dude's Fruit Cocktail Cake
1 1/2 cup flour
3 teaspoons soda
1 teaspoon vanilla
1 pound of fruit cocktail and all juice
Blend all together 2 minutes at medium speed
Bake 40 minutes at 350 degrees
Topping
3/4 cup white sugar 1/4 pound oleo and 1/2 cup canned milk.
Boil for 1 minute and spoon over hot cake.
I am sure Steve can fill you all in about Grandma's Uncle Dude.
Hot Water Gingerbread (Dorky)
1 cup molasses
1 cup shortening
2 eggs
1 tablespoon soda
1/2 cup hot water
1 tablespoon cinnamon
1 teaspoon cloves
1 teaspoon ginger
3 1/2 cup flour
1 cup boiling water
350 to 375 degrees for 30-40 minutes
Rhubard Cake
Sift together and set aside
2 cups flour
1 teaspoon soda
1/8 teaspoon salt
cream 1 1/2 cups sugar, 1/2 cup shortening
add 1 egg, beat well!!!
1 teaspoon vanilla
alternately add sifted dry ingredients and 1 cup sour cream mix well
stir in 2 cups chopped rhubarb
Pour batter into well greased and floured pan ( 7 1/2 " x 11 1/2" approx.)
Mix 1/2 brown sugar
1/4 cup white sugar
2 teaspoons butter
sprinkle over top of batter
Bake at 375 degrees for 30 minutees or till it tests done in center.
Tastes better second day if you can keep it that long.

Squash Pickles
Then drain and mix with 2 large green peppers (chunked).
Mix together-cook and dissolve ingredients before adding squash, then bring to boil and cook for minutes and then can.

1 1/2 teaspoons turmeric
1/4 cup salt
2 tablespoons celery salt
1 tablespoons pickling spice

Cranberry-Raspberry Salad
1 cup of jellied cranberry sauce
1 pt. sour cream
1 10 oz. package of frozen raspberries
2 3 oz. packages of raspberry jello
1 1/2 cup liquid (see below)
Thaw and drain raspberries. Measure liquid from raspberries and add water to make 1 1/2 cups. Heat liquid and dissolve jello mixture and mix well. Add all ingredients and chill until firm. Goes well with poultry or ham.e
Pennsylvania Railroad Dressing (P.R.R. Dressing)
Chip Dip
1 tablespoon milk
2 teaspoons chives
3/4 teaspoons worchestershire sauce
3 tablespoons ketchup
add more worchestershire sauce and ketchup if desired.
It should be pink not red when done.
Just mix all ingredients until it is ready to use.

Veal Casserole
2 tbsp. lard
1 1/2 cup sliced celery
2 small onions diced
10 1/2 ounce of cream of chicken soup
1o 1/2 ounce can cream of mushroom soup or cream of celery soup
1 to 12 (yes 12???? Carrie) soup cans of water
2 to 3 tablespoons soy sauce
1/c cup uncooked rice
Heat oven to 325 degrees
Roll meat in flour, brown in fat over medium heat, stir in rest of ingredients. Pour into a 2 quart baking dish.
Bake uncovered 1 1/2 hours uncovered.
Serves 6.

Liver Dumplings
1/4 cup milk
2 tablespoons of butter in skillet
1/4 cup of minced onions in skillet
1/4 cup parsley in skillet
saute butter onion and parsley and cool.
1 pound of ground liver
1 1/2 tsp. salt
1/4 tsp. pepper
4 tablespoons flour
2 eggs
saute in skillet for ten minutes.

1/4 c. butter
3/4 c. evaporated milk
3/4 jar fluff
3/4 teaspoon salt
3/4 teaspoon vanilla
12 oz. semi sweet chocolate pieces
Combine first 5 ingredients. Stir over low heat until blended.
Bring to a boil over moderate heat, being careful not to mistake air bubbles for boiling. Then boil slowly, stirring constantly for five minutes.
Remove from heat. Stir in chocolate and vanilla until chocolate is melted. Then turn into a buttered 9 x 9 pan and cool.

Grace's Butter Scotch Custard Pie
2 tablespoons butter
8 tablespoons milk
Boil until sugar is melted.
1 tablespoon flour
1 tablespoon corn starch
2 cups of milk
2 eggs
Bake crust, add filling beat white of eggs and a a little sugar. Spread over top and brown.
Grape Juice
1 cup sugar
Put cup of grapes and sugar into quart jar. Fill jar with boiling water and seal.

1 can tomato soup

1 cup lard
1 cup hot water
1 t. soda
1 T. cinnamon
pinch salt
Enough flour to make stiff and roll. Roll them and bake them quick.

Mashed potatoes are usually served as a side dish.
Mom tried the kraut in the refrigerated section in a plastic bag, but she
also used it in the can and the jar. All were OK with her. Grandma Kuhn
preferred it in the can or jar I think. Silver Floss was the preferred brand
but there is actually a brand called Kuhn which Steve brought from NJ which
we liked too. Mom always rinsed and drained the kraut it in a colander after
she took it out of the can, jar or whatever.
Then you put most of the kraut in a roasting pan and put the meat on top of
it. You can parboil the meat if you'd like before putting it on the kraut.
Mom often did this; I don't. Then you put an onion sliced about an half inch
thick over the meat and put the rest of the kraut on top. Add 1-2 cups of
water to the pan and put the lid on the roaster. (We use enamel oval shaped
roasting pans). You can also quarter an apple and add it too. Then you roast
it at 350 degrees until the meat is tender and ready to fall off the bone.
Depending on how much meat and kraut you use this can take anywhere from 1
and a half to 3 hours. You can turn the oven back to 325 degrees because
it's a slow-cooking kind of meal in order for the flavors to mix and the
meat to tenderize. You may have to stir the contents of the roasting pan a
bit and add water occasionally if the kraut starts to brown too much against
the sides of the pan.
